
No, no. I'm talking about the OTHER meatloaf. (Though there's always room for some awesomely cheesy 80's ballads). This is a super easy, basic meatloaf. Nothing special, it's just wonderful winter comfort food. The recipe is my mom's, with a few lower cal substitutions. Here's what you need:
Turkey Meatloaf
1 1/2 lb ground Turkey (93% lean)
1 C. tomato juice (low sodium, if you prefer)
3/4 C quick oats
1/4 C egg beaters
1 medium onion, chopped
Combine all ingredients (mix it with your hands and get dirty!). Pack firmly into an ungreased loaf pan. Cook for an hour and fifteen minutes at 350 degrees. Let stand 5 minutes before slicing.
Makes 8 servings, 161 calories each
I actually made this on Sunday, covered it in saran wrap, and stuck a post-it on it with the temperature and cook time. When I came home from work on Wednesday, I just put it in the oven! This is great served with some green veggies (fresh steamed green beans...mmmm) and instant mashed potatoes (1 serving for 70 calories with Jewel brand).
